WIN a Riverford Cook Book by entering the competition here: www.riverford.co.uk Ingredients: 500g courgettes -- trimmed & cut roughly into pieces the size of an almond 90g whole blanched almonds 2 tsp good curry powder salt & pepper 2 tbsp extra virgin olive oil mint leaves cut into fine ribbons Trim the courgettes and cut them into almond size pieces. Mix with the almonds, curry and salt and pepper. Cover the bowl and leave it for 15 mins. Take a large pan and heat the oil over a large flame. Put in the courgette mixture and cook, stirring regularly until golden. Throw in the mint, season the courgettes and eat straight away. Enjoy.
